2018 Dixons Creek Estate Cabernet Sauvignon
Complex aroma of blackcurrant, anise, cracked pepper, dried herbs with subtle hints of earthy notes are evident. The wine is full of densely layered flavours of baking spice, dark chocolate, plums and rhubarb enveloped in a firm yet inviting tannin structure. The meticulous use of French oak complements the fruit derived flavours and leads to an everlasting finish. Pair with venison, or with braised mushrooms served on polenta.
The Yarra Valley is a large and diverse region that includes both Mediterranean and continental climates. It is the geology of the Yarra Valley that dictates where the vines for each varietal will be planted, with the two climates influencing the types of soil found within the region.
